Measure yolk colour and egg white quality
The colour of an egg yolk can vary a fair amount and this is measured on a scale of 1-15 with 1 being bright yellow and 15 is dark orange. A yolk colour fan can be used to identify the colour of the egg.
The relative freshness of eggs can often be determined through comparison. Shown below is a comparison of 2 similar sized eggs, one is 4 days old and the other egg had been just laid that day. The white surrounding the newer egg is much firmer and has not spread as much as the older egg. In the second image it can also bee seen that the white of the fresh egg is also higher than the white of the older egg. By comparing the whites of two eggs this way it can often be determined which egg is fresher.
